How do I assure the my text that accompanies a photo upload appears above the image and not below it and/or in a random place?

In the lower right hand corner of the posting window you will find a blue button labeled Preview. This will show you the result of your draft.
I usually make sure I have the cursor placed where I want the image to show up before inserting the image.

To expand on Alans comment, When you click Insert Full Image it always gets inserted where the Cursor was last at in the message box.
So after typing my message and then uploading the photo, I will click with my cursor in the message box, usually pressing return so as to add a line or two of space below my text, then I will click on Insert Full Image button.
